Holiday season fruit salad

This recipe created by Nathalie Regimbal, RD, is a delicious way to include fibres in your meals this holiday season.

Ingredients
  • 1 quartered pink grapefruit, cut into pieces
  • 1 quartered orange, cut into pieces
  • 1 kiwi, cut into pieces
  • 60 ml (1/4 cup) dried cranberries
  • To your liking white grape juice
  • 2 sliced carambola
Preparation
  1. In a bowl with a lid, place the pieces of grapefruit, orange and kiwi. Add dried cranberries and mix gently.
  2. Add enough grape juice to cover the fruit.
  3. Cover and let stand for one hour.
  4. When ready to serve, decorate the salad with slices of carambola fruit.
